Recipe: Rosemary-Garlic Crusted Lamb

What you'll need:

  • 2 racks of lamb, frenched
  • ¼ cup fresh rosemary leaves
  • ¼ cup extra-virgin olive oil
  • 1 head of garlic, minced
  • Salt and pepper to taste

We used a hand-processor to blend the rosemary, garlic, and olive oil. Rub the lamb with salt and pepper, then rub the rosemary-garlic blend on (be generous)! Set the rack meat side up on a large baking sheet.

Pre-oven prep.

Preheat the oven to 450°. Put the lamb in on the top rack of your oven for 15 minutes. Flip the racks over and cook for another 10 minutes to get a beautiful medium rare.

Let them rest standing for 10 minutes and enjoy!
